How to Make Zucchini Bread

    This recipe makes two really delicious loaves of zucchini bread with moist interiors and crispy outsides. Best of all, it's a fun way to sneak some nutritious vegetables into your diet. Make this zucchini bread for your family, or wrap as a gift for a friend.

    You will need:

    • 1-1/2 cups all-purpose flour
    • 1-1/2 cups whole wheat flour
    • 1 teaspoon baking soda
    • 3 teaspoons cinnamon
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 3 eggs
    • ½ cup applesauce
    • ½ cup vegetable oil
    • 1-1/8 cups brown sugar
    • 1-1/8 cups granulated sugar
    • 3 teaspoons vanilla extract
    • 1 cup chopped walnuts
    • 2 cups grated zucchini

    1. Prepare two 8x4-inch loaf pans with oil and flour.

    2. Heat oven to 325 F.

    3. Sift flour, baking soda, baking powder, salt and cinnamon together in a medium bowl.

    4. Beat eggs, oil, applesauce, sugar and vanilla in a large bowl.

    5. Add dry ingredients to the creamed oil-sugar mixture, and beat until well mixed.

    6. Stir in walnuts and zucchini.

    7. Pour batter into loaf pans.

    8. Bake 40-60 minutes, until toothpick inserted into the loaf's center comes out clean.

    9. Cool for 20 minutes, and remove from pan.
